Rustic mashed FURIA potatoes
Ingredients for 4 people:
8 FURIA potatoes.
½ cup milk.
3 tablespoons butter.
3 slices bacon.
Cook the pealed potatoes for 20 minutes in salted water.
While the potatoes cook, cut the scallions in fine discs, also using the green portion.
Put one tablespoon of butter in a pan and a tablespoon of olive oil; sauté and add a dash of salt.
Cut the bacon slices in small pieces and put in a pan, with no oil, until they become crunchy.
Once the potatoes are cooked mash them with a masher or a fork, this puree should be lumpy.
Add 2 tablespoons of butter to the mashed potatoes, and then slowly add the milk, taking care that the mixture is not watery, mix everything.
Add the sautéed scallions and the bacon to the above mixture and stir.
This is pure winter flavor, ideal to accompany a pot roast.
